4th of July Fruit Pizza

Emma and Jess had fun making a 4th of July Fruit Pizza today. The berry crops have been especially good this year. I have a friend who owns a strawberry farm and the 2013 strawberry crop is fantastic.

Jess had a friend who recommended this recipe.  I’ve had many fruit pizza’s, but I especially liked the crust on this one.  It had yellow cake mix in it.

The girls started frosting the crust before we could grab a picture… (they were a little eager to try this one!)

Here’s something that doesn’t exit in the kitchen when I am baking: a bowl with left-over frosting in it.

The berries are sliced and washed.  The girls are ready to begin making their masterpiece.

Here’s our 4th of July Fruit Pizza! We haven’t made one in a while.  It was a festive dessert after grilled kabobs.

I’ve added the recipe below.  But first, let me show you the picture Emma and Jess accidentally captured as they were documenting their 4th of July Fruit Pizza…

Fruit Pizza Feet

This pretty much sums up this afternoon; Emma got a pedicure (blue toes), Jess helped us get ready to celebrate the 4th, and Sonny is always underfoot.

4th of July Fruit Pizza 

Crust:  

1 box of yellow cake mix

1/2 cup of margarine (softened)

1 egg

Mix together and put in a 9X13 lightly greased pan (press flat on bottom of pan).  Bake 10-15 minutes at 350 degrees until lightly brown on top.  Let bottom cool before adding middle.

 

Middle:

8 oz package of cream cheese

4 oz whipped cream (cool whip)

1/3 cup sugar

1 TBSP lemon juice

Mix cream cheese, sugar and lemon juice.   Fold in whipped cream.   Spread on top of cooked crust (bottom).

Top with Fruit!
