In a previous post, I shared how lucky I am to have a neighbor and friend who invites me to her house for lunch a few times each month.
Last week, she conjured up these Creamy Salmon Wonton Ravioli. This recipe was actually something DA whipped up as an appetizer for some out-of-town guests. When I visited her the next day, this quick appetizer was the perfect lunch along side fresh greens form my garden.The whole meal was amazing!
Having never bought or cooked wonton wrappers before (much less thought of using them as a variation on ravioli!), I had DA walk me through the steps of making her masterpieces. Here’s the packaging for the wonton wraps:
DA’s simple cream cheese mix. It’s cream cheese with dill, parsley and some lemon juice.
By the way, this is DA’s favorite blender. It’s the Bella Rocket Blender. It’s available on Amazon for under $30.
DA loves it because the individual cups are handy for individual custom smoothies in the mornings for her kids as well as prepping ingredients for cooking.
Once the ingredients are placed on the wonton wraps, the edges are moistened with a dab of water.
DA cooked them in a fry pan with a little butter.
To seal them, DA adds water and covers them for about 2 minutes.
She plated them up, added some capers and drizzled a little warm butter over the top.
Perfection. They were really light and flavorful. I came home with two precooked creamy salmon wonton ravioli and they reheated just fine the next day for lunch.
