Easy Beef Stroganoff

This week, I set out to make an easy beef stroganoff (is there any other kind?). My friend Jen came over and we cooked up 15 batches. Nothing like cooking with a friend! This recipe is simple and a crowd pleaser.  The kids gobbled it right up.  Victory!

I love cooking with friends. My friend, Jen, is a cook-in-the-making and I love to cook with her. Of course, we’d have fun just doing dishes together! We both have crazy strong work ethics, so when we cook…we cook! Here’s us before we cranked out 15 batches of easy beef stroganoff (in just 2 hours!)

Easy Beef Stroganoff with Jen

We started by baking up beef tenderloin.  I had about 9 packages of tenderized round steak.  Jen cooked hers at home and brought it over.  We sat and cut the steak into bite-sized pieces.

Next, we added butter, onions, mushrooms, beef broth and a little brandy into four sauce pans.

My kids and hubby love mushrooms.  Once, these cook down, this is what they look like…

My mouth is watering just looking at them!  Sooooo good.

Finally, we transfer this mixture to our cut-up beef.  We finish by adding cream, mustard and chopped fresh dill!

Easy Beef Stroganoff Recipe

2-3 lbs beef tenderloin or tenderized round steak

1/2 – 3/4 stick butter

1 pkg fresh sliced mushrooms

1 c. beef broth

2-3 T brandy

1 small carton whipping cream

1 T dijon or regular mustard

1 T fresh chopped dill

 

Serve over egg noodles. This one’s a keeper!
