Poppyseed Chicken Salad

This is my favorite Chicken Salad recipe. It’s a great quick lunch for me when I’m home writing or gardening all day. It keeps great in the fridge for about a week and I love to make a few batches and freeze them for future use.

Again, it’s another recipe that is easy to start with a bag of my processed cubed and cooked chicken which I’ve discussed in previous posts.

Next I add the halved grapes.

I throw in a little bag of sliced almonds.Almonds


This is the poppyseed dressing I like to use.

Next I add the cucmber.

Note: I process cucumber into bags ahead of time and freeze them.  Then when I need to use cucumber it’s ready to go.  They freeze really nicely – don’t forget, they are mostly water anyway.

Here’s the final product. Awesome and pretty.

Poppyseed Chicken Salad Recipe

2 -4 cups cubed cooked chicken

1-1/2 c. red grapes halved

1 small pkg sliced almonds

1 c. shredded mozzarella cheese (optional)

1/2 c. creamy poppy seed dresssing
